Needs more vegetables! Bell peppers (multiple colors), jalapeños, habaneros, and carrots. Gotta boil the carrots first to get it right but it's a nice addition. Then you get some nice color and flavor mixed in. Also, fresh tomatoes! Although it's not the season for that I suppose haha.

Beans only don’t go in chili if it’s for hot dogs. If it’s not for hot dogs, put beans in it.

I usually cook up some shallots to mix in with the onion, and add a little cumin. But thankfully chili is really hard to screw up, unless you’re from Cincinnati .
I like that you’re using bison, but with ground beef. Bison on it’s own is a little too lean for my liking when it comes to a rich, filling chili. I even go so far as to use lamb as well in mine.

Cinnamon doesn’t make skyline sweet, there’s no sugar with it so it’s just a spice. If you like jerk chicken you’ll like skyline chili

The one time I had it, it was cooked by a friend (who was actually from Columbus). His was sweet, and had way too much liquid. But he says that was the way he learned to make it back home.
So maybe the sample size was too small, but it’s turned me away from it ever since.

Someone oh here told me, when I said I don’t like beans in my chilli, that Mexican chilli doesn’t have beans, but American chilli does.
But each to their own.
